It’s no wonder that green tea is revered in Traditional Chinese Medicine and Ayurveda, and tends to be a staple in our modern pantries. Containing about half the amount of caffeine as the same serving of coffee, sipping green tea is just as energizing as it is beneficial. The secret to the potency of these tea leaves lies in their unrivaled flavonoid content, a type of antioxidant that helps support your body’s ability to manage oxidative stress.


Flavonoids like epigallocatechin-3-gallate and other compounds called catechins are abundant in green tea and make up about 30% of the dry weight of the leaf. These compounds are the catalysts for green tea’s laundry list of benefits, from oral health to immune support.

Traditional Green Tea 


1 tea bag or 3g of loose leaf

8oz of water


To receive optimal benefits from your cup of green tea, brew with water at a lower temperature between 160–170°F and for a shorter period of time. About 5-10 minutes of brewing will do the trick. 


Green Tea Muffins 


1 ⅔ cups all-purpose flour

½ teaspoon salt

1 teaspoon baking powder

1 tablespoon matcha green tea powder

¼  cup of honey

1 egg

⅓ cup melted butter

1 cup nut milk

 

Preheat oven to 350°F and coat a 12-cup muffin tin with butter or oil. Combine flour, salt, baking powder, and matcha and whisk. Set aside while you whisk egg, melted butter, nut milk, and honey in a separate bowl. Add the milk mixture to the flour mixture until moistened. Pour the batter into your muffin cups and bake for about 25 minutes. Let cool for about 5-10 minutes and enjoy!


Summer Green Tea Infusion

8 cups of water

8 green tea bags

1 bunch of fresh mint

1 cup of honey

½ cup of fresh lime juice

Ice, mint sprigs, and lime slices for garnish 

 

Bring 4 cups of water to a boil. Let cool, and add tea bags and mint. Cover and steep for about 10 minutes. Remove tea bags and add honey. Stir until honey dissolves. Add remaining 4 cups of chilled water. Chill tea in the refrigerator before serving, and garnishes for added flavor.
